Which Race box to check in an application?

If you feel that strongly, I'd leave it blank. You can always address your background in your personal statement, or look for scholarships that celebrate your heritage. You're right that schools should look at other forms of diversity than race - and they do - but they have to balance that with organizing all the applications in a way that gives them time to look at everyone.
